Basic information
Following the principles and practices built over the centuries in already recognized wine regions the Midalidare Sparkling Wine project was launched. 10 years ago, after a profound terroir analysis and assessment, the first vines of Chardonnay, Pinot Noir and Pinot Meunier was planted on the Prisovete and Dabovets vineyards. In 2020 a top selection of Midalidare Sparkling is presented – Midalidare Reserve Brut NV. A sparkling wine made according to the traditional method of sparkling winemaking, bottle fermentation, at least 48 months ageing on the lees and made with exceptional attention to detail.
Appellation and origin: Sparkling wine from Bulgaria, Chardonnay Brut “Midalidare Reserve”, traditional sparkling winemaking Blanc de Blancs, Thracian Lowlands, Mogilovo. Midalidare estate grown and bottled: vineyards Prisovete and Dabovets (Bio certified).

Tasting and serving
Tasting notes: Shiny, golden-yellow colour. The mousse is rich, ample, and prolonged. An intensive fruity nose of ripe apple, pear, and meadow is followed by nicely balanced and fresh palate. Midalidare Reserve Brut NV is tensed, full-bodied wine with good structure and great potential.
Serving suggestions: Excellent aperitif. Great match for fried food, crustacean, oily fish, white meat, pasta, hard cheese, and desserts. Pair with smoked salmon and crispy potato chips, pasta or pizza with cheese, creamy shrimps, or oysters. Serve at 7-9°С, in Tulip wine glass.
Storage: Cool and dark place, at temperature 5-8°С.
