Midalidare Sparkling
The idea
When we started building the estate, we had no plans for producing sparkling wines. The idea was born gradually, as a result of extensive research into the soils, climate and relief in the village of Mogilovo. We realized that the terroir in some vineyards was similar to the one in Champagne. We decided to take on the challenge and launch Midalidare Sparkling.
We conducted thorough analysis and assessment of the possibilities and planned the entire activity. Our winemaking philosophy was to follow the principles and practices built over centuries in established wine regions; to produce sparkling wine according to the traditional method, with second fermentation in the bottle, at least 18 months ageing on the lees and attention to every detail.
Interesting facts and useful information about sparkling wines
- All wines are non-vintage, although the first edition of Midalidare Deluxe Brut is actually of vintage 2014
- All wines have an alcohol content of 12.5%
- All wines are produced in 0.75 L and Magnum 1.5 L
- All wines have great aging potential and are suitable for an Enoteca
- We label all wines with "aging at least ... months" because we set the minimum period, but, at the discretion of our winemakers, some of the wines are aged longer than indicated
The LOT number contains a designation of the predominant vintage, the batch number under which the wine is recorded in the winery's diaries, the day and year of bottling.
For example, L 21-31/2024 160 should be read as follows: predominant vintage 2021, batch # 31, bottled on the 160th day of 2024.
Champagne styles are defined by sweetness (dosage), grape blend, ageing and production method. Midalidare Sparkling wines are estate grown and bottled and are made under the traditional sparkling winemaking.
Depending on the blend Sparkling wines are:
- Non-vintage Brut – colud be Chardonnay (white grape) only or a blend of Chardonnay, Pinot Noir and/or Meunier (white and black grapes). Midalidare wines in this style are: Midalidare Reserve Brut, Midalidare Pas Dose, Midalidare Premier Extra Brut
- Blanc de Blancs – Chardonnay (white grape) only. Midalidare wines in this style are: Midalidare Deluxe Brut, Midalidare Blanc de Blancs Brut
- Blanc de Noirs – Pinot Noir and/or Meunier (black grapes) only. Midalidare wine in this style is Midalidare Blanc de Noirs
- Rosé – could be Pinot Noir and/or Meunier (black grapes) only or blend of Chardonnay, Pinot Noir and/or Meunier (white and black grapes). Midalidare wine in this style is Midalidare Rose Extra Brut
- Prestige Cuvée – A Prestige Cuvée is the top-tier, highest-quality champagne produced by a house, representing its finest blending, best grapes, and superior vineyard parcels. These premium wines are often vintage dated, aged extensively, and designed for aging potential.
Depending on the ageing Sparkling wines are Non-Vintage / NV or Vintage
What does “Non-vintage” mean? This is a wine in which a “reserve” is added to the predominant vintage (usually 50% to 80%) – wine from an old vintage that the winery stores, the so-called stock. Often, 2-5 or more vintages are used, some of them may be less than one percent of the blend. “Non-vintage” sparkling wines dominate the market because the category allows producers to maintain a consistent style year after year. By including reserves from previous vintages, wineries can create a balanced, fresh and complex wine. At Midalidare, we store the best wines as a reserve, and since we have been setting aside from each harvest since 2014, we have the opportunity to maintain the high quality and unique style of our sparkling wines. This is also the style that the winery has adopted in its production.
When is a "Vintage" wine produced? This style of wine requires an exceptional vintage and a large number of factors, combined with high technical expertise. These wines require much longer aging and cannot maintain a consistent style due to differences between vintages.
Depending on the sweetness scale (residual sugar / RS) the categories are :
- Brut Nature 0-3 g/L residual sugar
- Extra Brut 0-6 g/L RS
- Brut 0-12 g/L RS
- Extra Dry 12-17 g/L RS
- Dry 17-32 g/L RS
- Demi-sec 32-50 grams of sugar per litre
- Doux more than 50 grams of sugar per litre
When categorizing by sweetness scale, it is important to note that the Brut category (0-12 g/l) contains the Brut Nature (0–3 g/l) and Extra Brut (0–6 g/l) categories. In other words, a wine with a residual sugar of 3.5 g/l can be labeled as both Extra Brut and Brut.
Midalidare Deluxe Brut, for example, is made of 100% Chardonnay, a blend of several vintages and with a RS of 2.2 g/l. We label it as a Blanc de Blanc style, NV (non-vintage) Brut.
Maturation on lees therefore involves two processes that occur simultaneously:
- Yeast autolysis,
- Slow oxidation via the stopper.
These processes complement each other especially well in Champagne, due to the delicate structure of the wines themselves. Maturation on lees is essential to encourage the gradual development of the so-called ‘tertiary aromas’ associated with graceful aging. Maturation on lees is a continuous process. The greatest Champagne wines can spend several decades maturing in the Champagne cellars.
In the 18th and 19th centuries, oak fermentation (malolactic fermentation) was the norm, but in the early 20th century, the trend began to slowly die out, because the wines were considered too heavy, too “oaky” and oxidative. In the 1990s, however, a new era began. The introduction of a small percentage of barrel-aged wine can add an almost imperceptible touch of spicy vanilla richness to the blend, and the wines become more expressive and complex. Oak-fermented wine is like salt in cooking - if you notice it, there is probably more than there should be, but if it is not there, the dish is not complete.
At Midalidare, we use oak fermented reserves, aged for 1 year in used oak barrels, adding them to the blend at a volume of 5% to 12%.
Reserves are stored in the cellar either in stainless steel vessels or in very old oak barrels, which do not affect the wine's profile. Some of the oldest wineries in Champagne store Reserves in oak for decades.
As with everything else, sparkling wines have their own fashion. When producing wines under the traditional method, at Midalidare we take into account trends and adapt our production. The vineyards are grown organically or sustainably. Our wines are low in alcohol, fresh, with low levels of residual sugar and elegant flavours, suitable for a wide range of dishes and foods.
The wines
Blanc de Blancs Style
The term "Blanc de Blancs" designates wines in which there are no black grape varieties. They’re bright, refreshing wines, whose liveliness comes as a pleasant surprise to palate and taste buds. When older, they take notes of dried fruit, hazelnuts, almonds, ripe apples, honey and wax. Maturity provides them with notes of brioche, fresh butter, biscuit dough and toast. Bothe Midalidare wines in this Style are made of Chardonnay.
Midalidare Deluxe Brut:
Midalidare's first sparkling wine and the first Bulgarian one to be awarded the title of "World Champion". It is aged on the lees for at least 24 months.
The black label and the Deluxe designation express the higher class and longer aging on the lees compared to the Blanc de Blancs, whose production runs in parallel. The first tirage was 2015 from the vintage 2014 and the wine was introduced on the market in 2018. The very next year it won international recognition, and the winery was awarded the Rising Star trophy. In 2020, the tirage 2016 from the predominant vintage 2015 became World champion Blanc de Blancs style.
As of 2025, in addition to the world title, the wine is awarded 2 titles of "National Champion", 5 trophies "Best in Class", 3 gold and 7 silver medals by The Champagne & Sparkling Wine World Championships. It has been awarded three times with the title "Best Bulgarian Sparkling Wine" and once as "Best Bulgarian Wine" by DiVino Top 50 and once with a silver medal by Sakura Japan Women’s Wine Award.
Midalidare Blanc de Blancs Brut:
The second sparkling wine introduced on the market. Aged on the lees for at least 18 months. Blanc de Blanc style.
An elegant floral-citrusy bouquet, a refreshing taste and an inviting long finish: this is our everyday sparkling wine, suitable for every moment and occasion. The first tirage is 2017 from a predominant vintage 2016 and was introduced on the market in 2019.
As of 2025 the wine was awarded 2 gold and 5 silver medals by The Champagne & Sparkling Wine World Championships.
Non-vintage Brut Style
A versatile sparkling wine, suitable for any occasion. A Non-vintage Brut wine can be a blend of white grapes or a blend of white and black grapes. And this makes the possibilities endless and each wine unique! Midalidare wines of this style are made of 60% Chardonnay and 40% blend of Pinot Noir and Meunier in different proportions.
Midalidare Reserve Brut
The third, but chronologically the second wine set for production. The first tirage is 2016 from a predominant vintage of 2015 and was presented on the market in 2020. The blend is 60% Chardonnay, 35% Pinot Noir and 5% Meunier. It is aged on the lees for at least 48 months.
The gold label and the Reserve designation indicate the highest quality, the best selection and the longest aging both on the lees and in the bottle. It is produced only in years when the predominant vintage is of exceptional quality and only on the Brut or Extra Brut sweetness scale.
As of 2025, the wine is the winner of 3 titles "Champion of Bulgaria", 5 trophies "Best in Class", 3 gold and 4 silver medals from The Champagne & Sparkling Wine World Championships.
Midalidare Premier Extra Brut:
The second wine produced only in years when the predominant vintage is of exceptional quality and the first in the Extra Brut sweetness scale with the concept of producing only in this category. The blend is 60% Chardonnay, 40% Pinot Noir. It is aged on the lees for at least 36 months.
The blue color of the label and the Premier designation indicate a step down from the Reserve, still offering high-quality and premium, but slightly less exclusive than Reserve, often offering better value. The first tirage is 2018 from a predominant vintage of 2017 and is presented on the market in 2021.
By 2025, the wine had won 4 gold and 4 silver medals from The Champagne & Sparkling Wine World Championships.
Midalidare Pas Dose
Midalidare’s wine in the Brut Nature sweetness scale. The blend is 60% Chardonnay, 30% Pinot Noir and 10% Meunier. It is aged on the lees for at least 36 months.
The first tirage is 2018 from a predominant 2017 vintage and the wine is presented on the market in 2023.
The Brut Nature category is very popular among bubble lovers and is the “driest” style with the lowest sugar content among sparkling wines. The category is difficult to produce and requires high grape quality and technical expertise. Unlike the Brut category, where the dosage balances high acidity, in Brut Nature it is only relied on skill and good judgment. This is one of the reasons why we are proud of our achievements and feel confident in our work.
As of 2025, the wine is the winner of 2 titles "Champion of Bulgaria", 3 trophies "Best in Class", 2 gold and 2 silver medals from The Champagne & Sparkling Wine World Championships, as well as the title "Best Bulgarian Sparkling Wine" from DiVino Top 50.
Rosé Style
A style of elegance and diversity. Very much in fashion these days, such wines can range from soft to deep pink and from very light to full-bodied. They can develop aromas around notes of freshness or complex bouquet.
Midalidare Rose Extra Brut
Midalidare's first sparkling rosé, the second Bulgarian sparkling and the first in the Rosé style, awarded the title of "World Champion". It is aged on the lees for at least 25 months. Extra Brut category.
The 2018 vintage is the first (2019 tirage) in which our Pinot Noir and Meunier vineyards yielded enough fruit for production. With each subsequent vintage, their percentage content in the blend increases, as does their influence on the aromatic and flavor profile of the wine. The current 2022 tirage from the predominant 2021 vintage, winner of the champion title in the Rosé Classic style, contains 15% Pinot Noir and 5% Meunier. The wine has been on the market since 2021.
By 2025, it was also awarded 1 "Best in Class" trophy, 1 "Best Bulgarian Sparkling Wine" title, 1 gold and two silver medals from The Champagne & Sparkling Wine World Championships and New Europe Wine Guide.
Blanc de Noirs Style
A full-bodied, heady Sparkling - this is the white wine made from black grapes. Sparkling wines in this style express strength, density and structure. The aromatic profile is complex, with the bouquet becoming increasingly expressive and deep with aging.
Midalidare Blanc de Noirs
Midalidare’s first sparkling wine in the Blanc de Noirs style. It is aged on the lees for at least 48 months.
A predominant 2020 vintage (2021 tirage) has finally allowed us to create the dreamed Blanc de Noirs – a white sparkling wine from black grapes. The white label symbolizes the colour of the wine and the sweetness scale – Extra Brut. The current tirage, which is also the winery’s first, is a blend of 90% Pinot Noir and 10% Meunier.
The wine was introduced to the market in 2024 and is the winner of the “Best in Class” trophy and 2 gold medals from The Champagne & Sparkling Wine World Championships.
The sparkling road to success
At Midalidare, nothing is left to chance. Each new project is carefully considered, with goals and the ways to achieve them outlined in advance.
The first step on the path to sparkling success was taken with the planting of new vineyards of the three permitted varieties in Champagne: Chardonnay, Pinot Noir and Meunier. In 2011, a phased planting of Chardonnay vineyards from specially selected French branches of the Prisovete vineyard began. In 2019, the first Pinot Noir and Meunier vines were planted on the organically certified Dabovets vineyard. The plantation of black varieties allows expansion of the sparkling portfolio and adding new styles of wine.
The vineyards are planted on a Northern slope, with the aim of receiving less sunlight and thus, better performance in future production. The plantations are at an average altitude of 350-400 meters at a 10% slope. The soils are alluvial and cinnamon forest, with the presence of clay and sediments, with a high limestone content and the ability to retain a large amount of water. The exceptional microclimate in the land of the village of Mogilovo is also characterized by large temperature amplitudes, northern air currents from the wide valleys; mild winters, warm summers and an optimal ratio between sunshine and precipitation.
The first vintage is 2014, and it is presented on the market in 2018. The very next year, the first recognition came both at home and internationally.
It has been 12 years since the first tirage and 8 years since its presentation. Now, in 2025, Midalidare is producing 7 wines in 3 volumes. Our Sparkling winery is operational and open for visitors from 2022. A part of the new winery is accessible for the guests and tourists, where they are able to learn more about the traditional sparkling winemaking, storage and ageing of the sparkling wine. In 2023 we celebrated the 10th anniversary of the Midalidare Sparkling project with two anniversary Magnum wines and in 2025 limited Jeroboam wines, which had been ageing on the lees for more than 10 years, were presented. Midalidare Sparklings are now produced in 3 different styles and 3 different sweetness scales starting from 1.

The Champagne method, which must legally be called the Traditional method outside the Champagne region, is the classic sparkling vinification process. It is generally believed to make the highest-quality, longest-lived, most complex sparkling wines in the world. It is also the most expensive, labor-intensive, and time-consuming. Midalidare Sparkling wines are made under the traditional sparkling winemaking.
