Carpe Diem is a popular Latin phrase from a poem by the Roman poet Horace. It means "SEIZE THE MOMENT", "ENJOY THE MOMENT", "LIVE TODAY". In fact, the phrase is part of a longer phrase "CARPE DIEM QUAM MINIMUM CREDULA POSTERO", which roughly translates as "SEISE THE MOMENT, DO NOT BELIEVE IN TOMORROW" or "LIVE TODAY, DO NOT POSTPONE FOR TOMORROW". Taken out of the context of the poem, the meaning is that life is short, and we do not know what tomorrow will bring. Therefore, we should accept whatever comes, pour some wine and live today, without placing our hopes on "tomorrow".

We created the Carpe Diem series to share our joy, happiness and satisfaction. Carpe Diem is for friends, for fun, for the everyday moments of life – the most precious thing we have as people. With Carpe Diem wines, emotions come alive in the enjoyment of the present.
How, however, to transfer the emotion in the form of wine? Of course, with a blend, with a combination of varieties. With young, vibrant and expressive wines, suitable for every taste, every moment and excellent in combination with a variety of dishes. The blends were not being changed since the first vintage, in different proportions depending on the season – Sauvignon Blanc and Chardonnay and Semillon for Carpe Diem White, Cabernet Sauvignon and Syrah for Carpe Diem Rose, Merlot and Syrah and Cabernet Sauvignon and Malbec for Carpe Diem Red.
Of course, the Latin name also implies a Latin reference. Carpe Diem's labels are made up of randomly arranged Latin words, between which are inserted the name of the brand, the varieties for the respective wine and the vintage. And because at Midalidare we love not only good music, but also football, our label maker has also inserted a joke to the fans of this sport. Initially in the bottom row of Latin words, now in the middle of the text - after the labels were refreshed in 2013. But be careful: to solve the puzzle, read backwards.
The first vintage of wines in the series was 2010, presented on the market in 2011. Since then, the three types – white, rose and red, have been offered in a screw cap half bottle of 0.375 l, a corked regular bottle of 0.75 l and a Bag-in-Box of 3.0 l. for large companies or home consumption. The wines are medium in alcohol content and are designed to be consumed in their youth, especially in the 3-liter volume. However, Carpe Diem Red, due to its relatively high level of acidity and partial oak maturation, has good potential for aging in the bottle.
The white member of the series is made from approximately 40% Sauvignon Blanc from Shipkata and Prisovete vineyards, 35% Chardonnay from the Shipkata vineyard and 25% Semillon from the Prisovete vineyard. The blend contains grapes from three different terroirs and from vines of French and Italian origin. Before fermentation, a cold maceration is carried out in order to extract colour and aromas from the skin. All three varieties are fermented in stainless steel vats and undergo a short aging on the lees.
Carpe Diem White is a fresh, mineral everyday wine, suitable for both as an aperitif and in food pairing. The pleasant, delicate aroma of citrus, peach blossoms, tropical fruits and freshly cut grass makes it a universal wine, suitable in combination with a variety of flavors. Try it with fresh salads, eggs dished, seafood, poultry, medium-hard cheeses such as Havarti cheese, chicken Pad Thai, chicken Fajitas.
In Carpe Diem Rose we are looking for colour, emotion, expressive and complex flavor. That is why the blend has a predominant Cabernet Sauvignon content – about 60%, against 40% of Syrah. Again, as with the white wine in the series, we blend different terroirs to achieve balance and richness in the aromatic profile. Cabernet Sauvignon is grown in the harsher conditions of the Karaliets vineyard, which the variety prefers. Syrah is grown on Shipkata vineyard, where the climate is cooler, the acidity is higher and the wine is fresher. Both varieties are fermented in stainless steel vessels and aged briefly on the lees in order to stabilize the wine.
Carpe Diem Rose is fruity, but the bouquet is fine and delicate. The combination of berries and citrus with a hint of herbs and the pleasant, slightly tart taste make it an excellent summer aperitif. You can also enjoy it with fish and seafood, white meat, tender red meat, spicy foods, fruit desserts. It goes beautifully with duck confit, shrimp fajitas, and grilled salmon.
Carpe Deim Red is the richest and the most complex of the three wines in the series. Not only because it is red, but also because of the quadruple blend, the combination of terroirs and the partial oak aging. The basis of the blend is Merlot from the cool climate of the Karaliets vineyard - about 60%. The second variety is Syrah from Shipkata vineyard - about 20%. The rest of the blend is divided into different proportions each year by Cabernet Sauvignon from Karaliets vineyard and organic Malbec from Dabovets vineyard, which makes the blend a combination of conventionally and organically grown grapes, although the share of the latter is relatively small. Each of the varieties makes its own contribution and the result is a wine with a velvety body, soft tannins, a wonderful fruity taste and a slightly spicy aftertaste.
The fruity profile with a hint of cocoa, spices and smoked meat refers the wine to pairing with more savoury and rich dishes such as stews and baked or braised meats with a side dish of grilled vegetables or stewed potatoes. Try Carpe Diem Red with roasted goat meat, steak with potatoes or beef stew.
